When the sun finally makes an appearance in the UK it’s all guns blazing to get the barbecue lit and make the most of the fleeting glorious weather.
Most people will think of pork sausages and beef burgers when thinking of barbecue food, but I always like to have a nutritional alternative. These are my Greek Inspired Courgette and Turkey Burgers which are lower in saturated fat and contain a portion of you 5-A-Day. They’re excellent cooked on the barbecue, but equally delicious if the weather takes a turn and you end up cooking indoors.
Makes 6 burgers or koftas
Ingredients
- 1 courgette, grated (200-250g)
- 500g lean turkey mince
- 1 tsp bicarbonate of soda
- 1 tsp garlic powder
- 1 tsp white pepper
- 1 tsp dried oregano
- 1 tbsp fresh mint, thinly sliced
- 100g feta, crumbled
- 15ml extra virgin olive oil
To serve
- Buns or wraps
- Tatziki
- Red onion slices
- Tomato slices
- Cucumber slices
- Halloumi, cooked and kept warm
- Greek Salad
Method
- Mix the courgette, turkey, bicarbonate of soda and spices together.
- Add the feta and mix till just combined.
- With lightly oiled hands, divide the mixture into 6 equal portions, either forming a round and flattening out for a burger, or rolling into a sausage for a kofta.
- Cook over a barbecue, or grill, or airfry till golden on the outside and cooked through the centre, approximately 10-12 minutes.
- Serve in a bun or wrap, with a layer of tzatziki over the bottom, and top with slices of onion, tomato and cucumber and finish with warm halloumi and some Greek Salad on the side.
