These festive croissants make the most delicious crunching during the festive season, and help to prevent food waste. People have been known to fight over the last one!

Ingredients
- 4 day old croissants
- 1 tbsp caster sugar
- 1/4 tsp mixed spice
- 100g ground almonds
- 60g butter, softened
- 60g caster sugar
- 1 egg
- 6 tbsp minced meat
- 40g flaked almonds
Method
- Make a simple syrup by boiling 80ml water with 1 tbsp sugar and mixed spice for 2 minutes.
- In a large bowl, beat the ground almonds, remaining caster sugar and butter together till crumbly. Add the egg in a mix to make a soft dough.
- Slice the croissant in half and brush the bottom slice with some syrup, spread 1/6th of the frangipane mix over and top with 1.5 tbsp minced meat.
- Sandwich with the top piece of croissant and brush with more syrup and top with a little frangipane and press flaked almonds onto the top.
- Place onto a lined baking sheet and bake at 160°C fan/ 180° convection for 18-20 minutes.
- Best enjoyed warm and crispy.
