Satay Marinade

I was kindly gifted some UK shallots which prompted this recipe. You might not have reliased that satay marinade doesn’t actually contain any peanuts, it’s just the peanut dipping sauce that goes with it that contains nuts.

Ingredients

  • 2 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 4 shallots, peeled
  • 2 pieces of galangal
  • 5-6 pieces of fresh turmeric
  • 2 garlic cloves
  • 6 stems lemongrass, finely sliced
  • 3 tbsp palm sugar
  • 2 tbsp blachan
  • 2 tbsp fish sauce
  • 2 tbsp neutral oil e.g. rapeseed

Method

  1. Toast the coriander and cumin seeds till fragrant and starting to pop. Allow to cool before grinding into a powder using a pestle and mortar.
  2. Blend all the ingredients, apart from the oil, to form a smooth paste
  3. If not using straight away, place in a jar and cover with the oil and freeze for later use
