Pan Fried Wild Garlic Prawns

The easiest and quickest of recipes to use wild garlic. Don’t be fooled by the simplicity of this recipe. It makes for the most delicious starter to share with friends, or use it as a main meal with the option to serve through pasta if you prefer.

Ingredients

  • 1 tbsp extra virgin olive oil
  • 200g cherry tomatoes
  • 100g wild garlic, chopped
  • 225g prawns, deveined

To serve

Method

  1. Heat a large pan till hot.
  2. Add the olive oil and the tomatoes and cook for 2-3 minutes, or until the tomatoes start to blister and burst open.
  3. Add the wild garlic and allow to wilt before adding the prawns and cooking for 2-3 minutes. Season to taste with a pinch of salt and white pepper.
  4. Serve immediately with slices of wild garlic focaccia to mop up all the juices!
