Thai Green Curry Paste

I was kindly gifted some UK shallots which prompted this recipe. Once you realise how easy it is to make you won’t go back to the shop bough jars!

Ingredients

  • 4 shallots
  • 3 large green chillis
  • 2 small green chillis (optional for a hotter paste)
  • 8 lime leaves
  • 2 lemon grass sticks, finely chopped
  • 1 tbsp blachan
  • 2 tbsp fish sauce
  • 1 garlic clove
  • 2 pieces of galangal
  • 1 bunch coriander root*

*If you can’t find coriander root, use the stems and leaves instead which will give a more vibrant green colour

Method

  1. Blend all the ingredients together till a smooth paste forms.
  2. If not using straight away place in a jar and cover with 1 tbsp neutral oil and freeze.
