I was kindly gifted some UK shallots which prompted this recipe. Once you realise how easy it is to make you won’t go back to the shop bough jars!
Ingredients
- 4 shallots
- 3 large green chillis
- 2 small green chillis (optional for a hotter paste)
- 8 lime leaves
- 2 lemon grass sticks, finely chopped
- 1 tbsp blachan
- 2 tbsp fish sauce
- 1 garlic clove
- 2 pieces of galangal
- 1 bunch coriander root*
*If you can’t find coriander root, use the stems and leaves instead which will give a more vibrant green colour
Method
- Blend all the ingredients together till a smooth paste forms.
- If not using straight away place in a jar and cover with 1 tbsp neutral oil and freeze.
